In this episode of Pasher Barir Ranna, Jessie Yung—chef and co-founder of Jessie Yung’s Kitchen in Calcutta—makes something she grew up eating in her Hakka home—bittergourd stuffed with minced meat (釀苦瓜). As it turns out, the Chinese love their bitters just as much as their Bengali neighbours. The bitter gourd is perfectly cooked, tender but not mushy, while the mince filling is bursting with savoury juices.

yeah!! i make them cantonese hk style, so the egg is mixed with a touch of cornflour slurry to keep them custardy-- fry the bittergourd w white pepper, oyster sauce, soy sauce, sesame oil, then add the egg in the center and fold together. the proper way is to fry eggs first but i just use a big pan

The way clans were formed in my city is so interesting. There are clans called "Tomato", "Bittergourd," and "magtatakong" or "heels maker". Like a lot of the clans here aren't based on surnames but what they were known for

There are two moments that stand out to me in my understanding and acceptance of "adulthood" - the moment I realised I could just buy a whole cake and eat it at any time and no one would stop me, and the moment I thought "hmmm bittergourd isn't so bad".

One context I was thinking of with "bittergourding" is whether I'm actually giving good, useful advice to newer designers to actually develop themselves (like my students) or just giving them "bittergourd" advice informed by my jaded tastes and experience, pushing innovation for innovation's sake.

Because it’s exactly what it says it is: it’s fucking bitter. With coffee and beer and other bitter foods I get that bitterness enhances a lot of the other flavour going on, but as a kid I was always just confused by bittergourd. It’s just bitter.

You’re so over “sweet” and “savoury” and “sour” because everyone does that, so you turn to bittergourd and you find that refreshingly challenging and fun. Not a perfect analogy, since liking bitter stuff is its own thing, but I always found it funny with bittergourd in particular.

My boyfriend and I made large batches of kimchi, pizza dough, and bittergourd powder over the weekend, and today we're planning to make a bunch of mandu. We keep joking that we'd be such good tradwives, except for the fact that we're also very good at our jobs and we're not conservative nutcases 😂
