Here's the format I use for overworld encounters, personalising the specifics for each region:

Roll a d12* on each table.
If any die is a 1 or a 2, the encounter is a surprise.
If any die is a 12, the party spots the encounter from afar.
Doubles determine how many NPCs/enemies are encountered.

Errant was one of the games that, when first reading it, ALMOST killed my whole drive to make Block, Dodge, Parry, because it does SO many things SO well and I was like, "fuck, what's the point".
