There is an inverse correlation between Colorado temperatures and green chile consumption. Not that we don’t eat it all the time, but sometimes I feel like it might be the *only* thing we eat during arctic blasts based on all the pics in my feed today.

We always make extra baked potatoes, the leftovers crisp up amazingly well in a frying pan and hashed anything is awesome. Or in my case today served alongside scrambled eggs, refries, and leftover green chile.
