We do this too and call these "stunt" challahs lol

So I double proof- I do a proof right after making or 1.5 hours (with a punch down half through), then shape, then another 1 hour rise before baking.

With this, I would proof, shape, and then freeze. Your plan should work to defrost in the fridge!

So my suggestion would be to proof and shape in a prior day and freeze before proofing in shaped form. On Friday, you can take it out and let it defrost 3-5 at room temp then it should proof to double size in like 1-2 hours after that and cook.

I was at a mental health first aid training this AM and hearing from grad students about how working on research 24/7 is expected and taking time off for self-care is seen as lazy, unmotivated, and worthy of censure. We need a cultural shift. #MentalHealth

Moved there in early 2016 and we had our place there until Dan moved to SLC to join me in 2019 (so I was back and forth between Jackson and SLC for two years).

One other thing from this doc that stopped me in my tracks: the labeling of covered humans (i.e. homeless folks) as objects, not human.
