So I double proof- I do a proof right after making or 1.5 hours (with a punch down half through), then shape, then another 1 hour rise before baking.

With this, I would proof, shape, and then freeze. Your plan should work to defrost in the fridge!

So my suggestion would be to proof and shape in a prior day and freeze before proofing in shaped form. On Friday, you can take it out and let it defrost 3-5 at room temp then it should proof to double size in like 1-2 hours after that and cook.

I was at a mental health first aid training this AM and hearing from grad students about how working on research 24/7 is expected and taking time off for self-care is seen as lazy, unmotivated, and worthy of censure. We need a cultural shift. #MentalHealth

Yep, a much better “hope machine” is decarceration. The story framing is an adoption of corporate techno utopianism instead of an examination of how dystopian it is to lock people in cages
That prisons are by design and policy so bereft of stimulation, education, entertainment, joy and connection makes it very difficult to say this is bad actually however it does not make it impossible to say this is not uplifting and heartwarming actually

An arsonist hit a Mississippi synagogue Saturday. Seven Torahs were damaged or destroyed in the fire.

One Torah, from the Holocaust, was in a glass case and wasn't touched.

The same synagogue was bombed by the KKK in 1967.

What is just crazy about this, aside from the need for this statement at all, is that Greenland already IS in the US sphere of influence. It's far cheaper for the US, in material, security, and reputational terms, to have Denmark continue administering Greenland and work within NATO on security.
