this is a good thread that finally reckons with the more primordial politics at play. there is a long, rich research tradition in conflict studies about the behavior of and strategy towards influencing audiences - by state security forces, by non-state armed actors. they all apply in the US now.

And have written about my dad’s hunting before because we really did use it for food—to such an extent that I can barely eat venison now. But goat reminds me of venison but milder. Not so game-y.

So I’ve been how to learn how to braise it and make a good curry. My brothers and dad were deer hunters so I ate so much venison growing up and grew tired of it. I had venison burgers, lasagna, steak etc

I tried to find a lamb shoulder but local butchers were out of shoulder. But one of the best things about living in NYC is you can always get any ingredient if you have time. I have a local butcher who does a lot of goat and one of my top five dinners ever was a head to tail goat dinner

My favorite BBQ sauce is a Carolina gold, which as an Alabamian, is sacrilegious

And pairing it, probably badly, with a Kentucky black BBQ dip which is heavily Worcestershire based and has allspice and brown sugar. Designed for lamb but I will shamelessly put a vinegary thing on something that’s too light for it. (And I love pickles of course)

I made a resolution this mornjng to post at least one thing a day that isn’t about the political apocalypse. Mostly for my sanity but maybe yours, too! So this is another kitchen post but I’m slow cooking a pork shoulder in a West Indian rub.
