My mashed potato recipe is lazy and delicious as hell. I do not peel and I do not fully drain. I wash and chop my potatoes. Boil them in two cans of evaporated milk topped of with water for coverage. Once they're fork tender, pour out a bit of the milk, throw in a stick of butter, salt and blend.
