I had a spiced coffee for breakfast, and a little sushi for lunch.

I'm going to have half a grilled cheese with a small cup of tomato soup for a little snack.

Dinner will be Indian food - saag paneer I made myself supplemented w/ takeout (tandoori chicken & samosas) from a local restaurant.

A photograph of a hand holding open a recipe book. the page is entitled chicken ruby and I'm going to put the recipe below: CHICKEN RUBY Ruby Murray was a 1950s Irish pop singer, whose name became Cockney rhyming slang for curry. This is our take on butter chicken, which was invented at the famous Moti Mahal in Delhi. Apparently, the cook first made this dish for his staff using leftover tandoori chicken in a makhani sauce. The owner then put it on the menu, and it soon became their most popular dish. SERVES 4 700g skinless, boneless chicken thighs 20g unsalted butter, melted 1 quantity makhani sauce (page 360) 50ml double cream FOR THE MARINADE 10g fresh root ginger, chopped 20g garlic 15-6 cloves), chopped 5g fine sea salt 1 tsp deggi mirch chilli powder 1½ tsp ground cumin ½ tsp garam masala (page 356) 2 tsp lime juice. 2 tsp vegetable oil 75g full-fat Greek yoghurt TO GARNISH Ginger matchsticks Coriander leaves, chopped 1 tbsp pomegranate seeds 1. For the marinade, blitz the ingredients together in a blender to a smooth paste. Transfer to a bowl. 2. Cut the chicken into 4cm chunks. Add to the marinade and turn to coat. Cover and leave to marinate in the fridge for 6-24 hours. 3. Heat the grill to medium-high. Place the marinated chicken on a rack in the grill pan, brush with the melted butter and grill for 8-10 minutes, until cooked through and nicely charred. 4. Warm a large saucepan over a medium-low heat. Add the makhani sauce, cream and grilled chicken and simmer very gently for 10 minutes. 5. Serve the curry garnished with ginger matchsticks, chopped coriander and pomegranate seeds, with a bowl of steamed rice on the side.

Made butter chicken today.
Roasting pan full of charred chicken legs and thighs. The charring is on purpose to replicate the tandoori effect. Blender filled to the absolute brim with butter chicken gravy. Separate glass containers filled with chicken topped with gravy. The gravy i should specify is orangish in color and made from tomatoes, coconut milk, onions, cashews, and tons of spices. The chicken and associated basmati rice all tucked away neatly in the fridge.

I used to be very anti-pineapple on pizza. However my palette expanded to include Indian cuisine such as Butter Chicken and Tandoori. So now I enjoy and appreciate a Hawaiian pizza. Still nothing beats a Bronx style Sicilian pizza with pepperoni for me. Corner slice & a Jamaican BP w/ cheese.

🍽️ Pineapple tandoori coconut milk chicken. Another non-authentic invention by yours truly, this long-simmering dish was conceived during a pantry clean out where I found 3(!) cans of pineapple. I love simmering dark chicken meat for hours in my dutch oven.

Got the chili put in the freezer in the meal-prep blocks. I'm going to make tandoori chicken and rice for prep tomorrow.

I already have vegetable soup in the freezer in Rubbbermaid bowls so I have 3 choices for lunch now. And I got stuff for "open and dump" 1 pan dinners so next week is sorted.😁

I wanted to get something special for my Birthday/Super Bowl Weekend. I ordered Tandoori Chicken Pizza from Curry Pizza House in Round Rock, Texas. Added mushrooms and black olives. Best pizza I've ever had.
