Cold weather just makes the greens more powerful

Deep green kale leaves mixed with scallions, cabbage, red bell pepper, mushrooms and pork belly in a big glass bowl with chopsticks.

Kale with "thrice-cooked" pork: kale leaves and stems sauteed with scallion and habanero, then topped with leftover twice-cooked pork.
