Go very, very light on the hops (we used them in NYDC’s “Chief Gowanus New Netherland Gin,” an attempt to make an early New Amsterdam style colonial genever. Allen Katz and I found that a soaring hand with the hops was best, but used thus they were a great addition.

A good editor, who won’t let you get away with publishing a draft in place of an actual article, book, whatever, and a fact-checking department are the greatest luxuries a writer can have. (Besides pot and pots of money, obvs.)

Quality Virginia rye, as was, 1858 (from the Alexandria Gazette, October 25th). Note the hops, an old Dutch ingredient that still sneaks into some bourbons through their yeast culture, where it's used as a preservative. (A little goes a long way)
