one can reasonably assume that prince daemon targaryen has access to sharp and disused knives!
Whether it's the gang of psychopathic knife wielding Jimmies in Bone Temple, or the shaved-bald orphan from the new Game of Thrones, modern TV is making a lot of assumptions about how easy it is to keep knives razor-sharp under heavy use.
