Okay, not so much a novella. More three novellas in a monk's robes pretending to be a novel, but my usual answer is A Canticle for Leibowitz.

My favourite actual novella is Claire Keegan's Foster - the basis for the film The Quiet Girl. Both extraordinarily beautiful and heartbreaking works.
