ME: “uh oh, Mom doesn’t like Riesling. But I do! Better serve her a red soon, Aldi.”
MOM: “Wasn’t holding out much hope. Although it’s really too sweet for my liking it does ok with the cheese. That chocolate was awesome!”

Day 10: Pesto Gouda
That is very pesto forward. I could not taste the cheese for a good minute afterward. I'm not sold on the combination of Gouda and pesto, either.

a couple weeks ago: i have finally devised which is the most cost-effective wedge of cheese in this grocery store. i will then proceed to buy this large fuckoff wedge of gouda and eat it straight for meals

I’m not a fan of sharp cheese but did try it with dubliner first and that was good too. Gouda and Brie have been my favorite

Every December, we are gifted a full 2-lb round of local monastery gouda. We always age the unopened cheese in the back of the fridge for a year or two because that extra time is totally worth the wait.

Anyway, we cut into the 2023 gouda tonight and it was *chef's kiss*.

DAY 9: Sunset Peak, California Chardonnay; mustard Gouda; Rondello
ME: “Website says notes of brioche & vanilla. No?? But better than that Pinot Grigio.”
MOM: “I’ll finish it, it’s not really memorable, but definitely better than the Pinot. The cheese wasn’t very strong for all the mustard seeds.”

tea : the rose blossom in this is kinda medicinal? not super tasty but it's also on the weaker side, so not strong enough to be actually gross
cheese : kind of a cross between cheddar, gouda, and...hmm pimento spread? no actual peppers in this afaik, just reminds me of the flavor. pretty good!

Cacio e pepe famously calls for a specific cheese. Of the 10 cheeses in my fridge, none are pecorino romano and I'm not going to the store so I will sub a lovely double cream gouda from artikaas, a Dutch cheese maker. Harder to grate as tiny chunks of cheese fall off, a problem I am happy to have.

This soup has turned out so well both times I've made it. I put a big handful of pepitas in mine because that's how I roll, and there's no bacon in here but here's the recipe I used, except I had to add liquid smoke because plain gouda. It doesn't taste squashy.

We’re all getting older 😉 and the aged Gouda & smoked Swiss that I loved in my youth… had to go.

Blocks of hard Philadelphia cream cheese, in the old foil, are the standard for a good cheesecake; or melted into a sauce.

Ok one last try before I toss this pan. Tuna casserole getting ready to go into the oven. It is topped with shredded Gouda and sharp white cheddar. Just spent over an hour making the cheese sauce so I am hoping not to burn the hell out of where it touches the pan

As long as it’s sour, I don’t mind. 😋
