My take: it was hardly just that it challenged norms. To accept that handwashing was necessary meant accepting that prior to that they'd all been spreading disease and killing patients. The challenge was to their very identities.
It’s worth noting that for many years doctors refused to wash their hands, not because there was a lack of evidence for it being a life-saving measure, but because it challenged established norms. We are seeing the same regressive phenomenon with masks now.
