I was able to wander Jamaica for awhile. I ended up in an old neighborhood that had a little grocery store. I found an elderly lady shopping and asked her what her favorite jerk seasoning was. She immediately pointed to Walkerswood.
Turns out, that was a real find ! 😎

We stopped making our own sauce and use Walkerswood. We did half mild and half spicy, which is not the right ratio if you value your tongue.

It's real basic, inspired by the grill master @metroman80.bsky.social.

But I mixed:
Mild and Hot Walkerswood Jerk sauce (a dab of the hot will do!)
Honey
EVOO
Brown Sugar
A lil garlic

Let that marinade sit for a few hours and then put them on the grill.

I'll do them in the oven this time tho

Sweet potatoes. Boiled.

Mash w. a few tbsps of butter.

Add your favorite pumpkin pie, vindaloo, & bright orange Ethiopian-style spice mixes to taste.

Goes lights-out w. boneless country style pork ribs marinated in Walkerswood mild jerk, grilled, & finished in a crock pot until spoon tender.

The Badia brand powder is all heat, not a ton of flavor, but it has its moments. When we first started buying it, we were buying a pre-made sauce by a company called Grace. Walkerswood is also another popular one in the States, at least, though I think we tried that and didn't love it.

No other seasoning. I (a non Jamaican) find those products from walkerswood to be perfectly balanced in flavor. Even on the slightly salty side (but still fine).

For sure…no real secret! Marinate using your favorite jerk seasoning, grill to medium. Then lightly coat with a mixture of honey & jerk sauce. I like walkerswood brand jerk seasoning. You can blend the spicy & mild to your preference. (I don’t measure anything for this)

Walkerswood Jerk on one batch and homespun Salt, Pepper, Paprika & Parsley in the main.
The other breasts have Garam Masala, Paprika and Cumin

Yup! Walkerswood makes a sorrel chutney and I just heat it up and mix it up with my favorite BBQ sauce.

Yes! You would just use the jerk seasoning by itself. I use walkerswood if you can find it.

Based on ingredient availability, I ended up making a Jamaican Jerk BBQ sauce (improvised it but the base is Walkerswood Jerk Seasoning - shouts to @standalone.bsky.social). The ribs are in the oven and don't have the sauce on them yet, but the sauce itself tastes unbelievable. Can't wait.
I have a rack of ribs in the fridge. I don't have a grill or a smoker or anything like that, just an oven. Anyone have any favorite ways to season ribs or a favorite sauce I can make? wanted to ask here before I go hunting for recipes/preparation tips on google

Walkerswood™ brand sauces the best Jerk(ish) flavor hack in the game. Jerk Villa Marinade fyeashell too.. but thats local. Walkerswood when its on sale? eeeee... girl gimme dat puhh faceasss... its a jerk chicken all the time summer.

Giving this warning to any other basic white people thinking of scooping out half a jar of walkerswood hot & spicy jerk seasoning to roast some vegetables.

You don't need that much. Your face will be incredibly surprised, especially the interior parts of your face that will hurt

I recommend it tho
