Making badass rice again, but time it's basmati rice. I'm toasting it in a pan of melted butter with the "tomato with chicken" buillion and turmeric again, but adding in achiote & cilantro seasoning, and cumin. And then in the rice cooker with chicken broth.

Shit's gonna be the star of the show.

What are your go-to/favorite seasonings aside from the big ones? (Salt, pepper, garlic powder, onion powder)

Italian blend (seasoning- usually rosemary, basil, oregano, garlic powder), Adobo with achiote, bay leaf, chili powder, lemon pepper, nutmeg, allspice, curry leaf/powder, ginger, cinnamon.
Tajin/chile lime, adobo, za'atar, ras al hanout, lemon pepper, herb de provence, pumpkin pie/apple spice, gomashio (Japanese black sesame seed salt), furikake (Japanese seaweed salt blend), Zatarains Cajun Seasoning, Old Bay

For me:
- rosemary
- parsley
- cinnamon
- lemon
- paprika
- Italian herb mix

it's a really lovely marinade with blood orange zest and juice, same with lime and a lemon. achiote paste gives it that nice red. it was succulent and delicious.

If you're making seiten, achiote paste is great both for coloring and flavor.

So far I’m thinking of using achiote and citrus to marinade a pork butt and then, soling it low. Otherwise I’m thinking burnt cabbage and maybe some kind of starch or bean element. I have this flavor on my tongue of a Syrah or Albariño that I think would work with it.

I followed a basic Chinese recipe with the exception of adding achiote powder, a natural food coloring & mild spice common in Caribbean cooking. Not to say it was lacking flavor but the notes left me desiring more. I think next time I'm gonna hit it with more Puerto Rican inspired flavoring 🇵🇷✨️

Exactly. It’s a jar of homemade sofrito in the fridge, some achiote oil, and some chicken. We can do asopao or beans and rice with a nice grilled thigh. But I’m not frying a damn thing.

The chicken is very tender. The rice and beans are pedestrian. The achiote roasting spice is not spicy. Has tartness from lime and a whole lot of salt. A LOT of salt. I am a salt lover, but this is too much salt. I would’ve rather had the spicy caesar that this replaced.

I recently did Cochinita Pibil in the sous vide. Turned out great. I put the achiote paste, bitter orange and liquid smoke in the sous vide bag. I really do think that it imparts more flavor than a traditional marinade.

I wouldn't call queso amarillo "food diversity". It's just gringo shit. Here in Mexico we don't put cheese on our tacos unless they're tacos dorados and even then the cheese is just a sprinkling of cotija.
Funny thing about gringo cheddar is that its color comes from achiote. Real cheddar is white.

I made chili with it first. Kidney and black beans and the whole mirepoix thing and this sauce and a bit of sugar and lil extra chili powder and a dollop of achiote paste and I will say that was the best chili I have ever made 3/
