America's Test Kitchen has been my go-to for years now! The recipe developers do lots of science (which you can read if you like or skip right to the recipe) and they include photos and illustrations which are really helpful. They help me understand not just what to do but why to do it.
I have developed zero recipes for NYTimes Cooking, and more than 100 for ATK, this is correct

It's pretty unpopular widely because implementation is correlated with a decline in existing service quality. If it weren't for the addition of AI causing things like suddenly Google maps refusing voice commands, popular opinion would probably be different.

•it is terribly inefficient
•it pollutes
•it is/was oversold
