Rori nailed what makes the Minions popular so succinctly. The Minions isn't a plot centric property. They are at their best when they are allowed to wander aimlessly and get into hijinks. They should exist in a Mr. Bean/Pee Wee's Big Adventure world where the slapstick journey is the point.
I think a big part of the whole Despicable Me / Minions thing is very much that it fills a void in modern Western children’s entertainment for wacky old-fashioned cartoon slapstick while Pixar got maudlin and Disney got sweaty.
