what a delightful idea!
A couple of years ago we got sort of exhausted about the similar meals for Christmas Eve, Christmas, in law Christmas etc. so now Xmas Eve we pick a country and tell our kid that is where Santa is stopping for dinner so that is what we are having for dinner too.

This is your yearly reminder that there's no real shortcut to caramelizing onions, and anyone who tells you they take under half an hour is a filthy liar. HOWEVER! One small help I've used for years now is adding water, covering the onions, and boil until they collapse. Save yourself ten minutes!
