They weirdly are not that focused on Islam right now, and also it isn’t a law in Islam, just very common. Jews believe in the covenant in general, Muslims don’t, they just tend to circumcise (like most Americans do)

My favorite is The Other, ha-Aher, Elisha Ben Abuya, who basically was a famous scholar who became an atheist and was famous for being a well-educated Greek philosopher who really liked singing songs in Greek.

He was one of the four greats who went to Pardes in the Talmud

We had an interfaith thing with local mosque and the rabbi sighed loudly at one point and said “you guys arguing with me is making us look like a stereotype to our visitors”
