Pork shoulder is coming along. Cooked 40 hours at 165f/74c in the sous vide, then put in an ice bath to get down to 35f/1.5c to firm up a bit and make it take on smoke better. Just getting back up to 165f/74c with the applewood smoke for texture and flavor

I was a vendor in retail stores during COVID. I visited hundreds of stores around New England. I saw the staff of these get literally decimated. I had so many stores because my team lost 8/12 people, mostly to pulling out of the workforce for safety reason but a few died.
There's a whole lot of people who didn't work with the public during COVID, so their experience of it was mostly from inside the walls of their homes or from workplaces mostly cut off from the outside. For a huge amount of people it was just weather happening elsewhere.
